Ingredients:

  • 4 large potatoes
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon dried mango powder (amchur)
  • Salt to taste
  • 2 tablespoons chopped coriander leaves for garnish

Instructions:

  1. Boil the potatoes until they are soft. Once done, peel and dice them into small pieces.
  2. In a large pan, heat the oil over medium heat.
  3. Add the cumin seeds to the hot oil and let them crackle for a few seconds.
  4. Add the diced potatoes to the pan and fry them for 2-3 minutes, until they are golden brown.
  5. Add the coriander powder, turmeric powder, red chili powder, garam masala, cumin powder, and dried mango powder. Mix well to ensure that the spices are evenly distributed on the potatoes.
  6. Add salt to taste and cook for another 2-3 minutes, until the spices are well combined with the potatoes.
  7. Once done, remove the pan from heat and transfer the Shahi Aloo to a serving dish.
