Ingredients:
- 4 large potatoes
- 2 tablespoons oil

- 1 teaspoon coriander powder

- 1/2 teaspoon cumin powder
- 1/2 teaspoon dried mango powder (amchur)
- Salt to taste
- 2 tablespoons chopped coriander leaves for garnish
Instructions:
- Boil the potatoes until they are soft. Once done, peel and dice them into small pieces.
- In a large pan, heat the oil over medium heat.
- Add the cumin seeds to the hot oil and let them crackle for a few seconds.
- Add the diced potatoes to the pan and fry them for 2-3 minutes, until they are golden brown.
- Add the coriander powder, turmeric powder, red chili powder, garam masala, cumin powder, and dried mango powder. Mix well to ensure that the spices are evenly distributed on the potatoes.
- Add salt to taste and cook for another 2-3 minutes, until the spices are well combined with the potatoes.
- Once done, remove the pan from heat and transfer the Shahi Aloo to a serving dish.
- Garnish with chopped coriander leaves for an added burst of freshness.
